Easy Recipe: Shrimp & Lobster Louie



Here is a simple recipe I have for "Shrimp & Lobster Louie" salad. I am looking for some feedback on how to give this recipe a little something extra. All you experienced cooks out there are welcome to give me any suggestions you may have to make this salad tastier.


Ingredients:


1lb rainbow rotini

1 cup mayonnaise

1 chopped onion

3 Tbsp chili sauce

4tsp lemon juice

1lb frozen peeled shrimp

1lb frozen flaked lobster




Cooking Instructions:


1) Thaw seafood

2) Cook rotini according to instructions on the box for "firm" results

3) Combine mayonnaise, onions, chili sauce, and lemon juice. Mix well.

4) Combine rotini, seafood, and mix. Toss gently to coat.




Being located in New England along the East Coast, I never have to worry about whether the seafood sold around here is fresh or not. There are a few variations on this recipe that I have thought about trying. For instance, I was thinking of substituting various salad dressings for the mayonnaise. Or how about adding in lime juice or tossing the salad in a little bit of fine bread crumbs?

If you are fans of the Food Network or Bravo's Top Chef, then you probably know that the 2008 Great American Seafood Cook off took place this past weekend. Would you ever dream of entering a cooking contest? I often dream of it. Somehow I've gotten the reputation amongst my family that I can't cook just because I don't have time to. I actually love to cook. Wouldn't winning such a cook off put them in their place? So what sort of ideas do you all have to get me there for 2009?
