Today I made enough bruschetta to serve 40 people. I had to quadruple the recipe . . . that's 24 tomatoes I had to chop. If I never see another tomato again, it will be too soon!!!
Anyways, I thought I would share this easy recipe. It is great if you are ever stuck for an idea to have something to bring to a gathering.
INGREDIENTS:
1-1/4lbs plum tomatoes
5-1/2 Tbsp olive oil
3 Tbsp lemon juice
1/2 tsp minced garlic
2 tsp dried basil leaves
1/4 tsp salt
1/8 tsp pepper
Step 1. Coarsely chop tomatoes
Step 2. Heat 1-1/2 Tbsp oil in large heavy skillet
Step 3. Briefly saute tomatoes to soften
Step 4. Combine remaining oil, lemon juice, garlic, basil, salt, and pepper
Step 5. Drain some of the excess liquid from the skillet
Step 6. Stir mixture into tomatoes and remove from heat
Step 7. Serve warm or cold on top of french or italian bread, pasta, salad, chicken, etc . . .
