Two Easy Recipes: Tomato & Spinach Flatbread Pizza and Breadsticks


My children have recently discovered a new favorite snack . . . flatbread crackers.  They would eat them all day everyday if they were allowed.  That is why I was extremely interested in trying the new Arnold Artisan Ovens Flatbread.  In addition to simply melting sliced cheese on them like my children requested, I tried a couple of other ways to incorporate this new flatbread into our family meals.  Below are two very easy recipes for a pizza made with fresh tomatoes and baby spinach and for Parmesan breadsticks.




Recipe:  Garlic Tomato Spinach Flatbread Pizza

INGREDIENTS:
8oz shredded Mozzarella cheese
20 grape tomatoes, sliced
dozen organic baby spinach leaves, chopped
minced garlic
basil
extra virgin olive oil


Step 1.  Preheat oven at 425 degrees.

Step 2.  Place pieces of flatbread on a baking sheet.  Then lightly brush the top of the flatbread with olive oil.

Step 3.  Lightly sprinkle flatbread with basil.  Then spread on minced garlic evenly, using as much or as little as you like.

Step 4.  Bake in the oven for about 2 minutes or until the flatbread just begins to brown.


Step 5.  Top hot flatbread with shredded mozzarella.  Then add the chopped baby spinach and sliced grape tomatoes.

Step 6.  Bake an additional 3 minutes or until cheese completely melts.

This recipe serves approximately 4 people . . . one personal pizza for each.  Each package of Arnold Artisan Ovens Flatbread contains 6 pieces of flatbread, so you can always prepare more in no time.

Recipe:  Parmesan Flatbread Breadsticks

INGREDIENTS:
grated Parmesan cheese
butter or margarine


Step 1.  Preheat oven at 425 degrees.

Step 2.  Place flatbread on a baking sheet and slice each one into quarters lengthwise.

Step 3.  Spread softened butter or margarine evenly over the top of the flatbread.

Step 4.  Sprinkle with grated Parmesan cheese.

Step 5.  Bake for approximately 5 minutes or until flatbread is nicely browned.


We served our breadsticks with pasta salad, but they can go with most kinds of pasta, soup, green salads, and more.
