Ruby Tuesday: Fresh Fruit Cake

This dessert is one of our favorites. It is a sponge cake with fresh fruit between the layers inside along with whipped cream frosting. Then the outside is also covered in the same frosting and then topped with fresh strawberries, peaches, honeydew, cantaloupe, and kiwi. These cakes can usually be ordered from Chinese bakeries.

Not only are these cakes always beautiful, but they are delicious . . . light tasting, fresh, and not overly sweet. The trick is that you need to eat them within a day or else the fruit will make the cake soggy.
